Quick question...how long can head cheese sit out at room temp?

4 hours between 40 and 140 degrees is sufficient time in the "danger zone" for food to develop enough bacteria to make you sick. I'm sure 20 people will post that they leave food out longer than this all the time and never get sick. And they're right. It's just that one time that the ecoli gets you and then you get to be a parapalegic. Definitely worth it not wasting that $10 worth of head cheese!

It's traveling with me as a gift. Once opened, I guarantee it won't be around for 4 hours.

A better question would be, does it freeze well? If so, I'll put it in there before travel.

yes, it freezes great... have kept for over a year..

Thanks. I've just put it in the freezer rather than risking it getting warm.

I LOVE it at room temperature. Got some yesterday from Martin's and it sat in the car for a couple of hours and was perfect.
