Question about potatoes au gratin

I've looked at a few recipes (including one in the TD cookbook), but I'm wondering if I couldn't just make the same bechamel I make for mac 'n cheese and pour that over thinly sliced potatoes in the baking pan?

Serious Eats Hasselback potatoes gratin

I make this every thanksgiving and Christmas and everyone loves it.

This is the recipe I use LINK

Pretty good stuff. I recommend boiling the potatoes first to soften. The bechamel is awesome

Damn, that is impressive. Don't know if I can slice potatoes so consistently and I don't own a mandoline.

My original plan was to do something similar, although my bechamel recipe is slightly different. Might still go with this plan and your recipe will be very helpful.

I'm thinking of cheddar, Gruyere and goat cheese.

The first time I made that I didn't have a mandoline either. I bought one soon as I found out how good this recipe is.

If you follow his steps exactly, you will have an end product that looks just like that one and tastes as good as it looks. If you make it, I bet santa will have a mandoline under your tree next Christmas.

My sister cut off the tip of her pinky with a mandoline. I'm skeered of one!

Yep, you have to discipline yourself to use the guard. If not, mishaps will ensue. I sliced my hand right below my thumb on Monday making a french onion soup.

I've never sliced potatoes in a food processor. Wonder if that would work.

If you use the food processor, make sure to have potatoes that are sized appropriately to fit into the feeder. I bet you can find a bag of russets that would work.

If you trim and square the end a food processor will work. I waffle cut my thumb on my mandolin which made it look like a tic, tac, toe wound and hurt like hell.

And I picked russets at Calandros a few days ago specifically for that and for this recipe since it was posted here a few weeks ago. I will make it in the morning.

Sorry about your thumb. An injury like that would put me on the shelf easily. I got a sliver of metal under my index finger on my dominant hand that hurt like hell for two weeks.

Those uniform slices of potatoes is what make the risk of using a mandoline worth while, just always use the guard.

I use the guard. Hell I wasn't even using it I was just moving it.
