Pulled Pork Chimichangas

1.5# of smoked pulled pork. Toss with Carolina BBQ sauce (Carolina is very important. It’s doesn’t taste right with other bbq sauces. I’m not a fan of Carolina sauce, except in this dish)



Roll in flour tortillas



Fry to golden brown






Serve with slaw, watermelon, and side of Carolina bbq sauce

Looks good but they look more like flautas than chimichangas. I would definitely eat them though.

This is what we’ve always called them. Stole the idea from TJ Ribs, but they use shredded beef. They called them chimichangas.

They look good…we always knew those as taquitos/flautas growing up, pretty simple/traditional.

The abomination known as a chimichanga is a whole arse burrito…rice, beans, meat, cheese, whatever else you can cram in there that is rolled up and deep fried.

I just looked these up. Biggest difference is those are made with corn tortillas, fried till crispy.

These “chimichangas” are flour tortillas, and are still soft and fluffy after frying. They have the texture of a chalupa shell from Taco Bell.

They remind me more of a diminutive version of a crispito but, whatever you call them, I would eat my weight in them with jalapeño queso dip.

Taquito - fried corn tortilla
Flauta - fried flour tortilla
Chimichanga - fried burrito in a flour tortilla

All equally delicious.
