Little over done for my taste, but I'm definitely taking some ideas from this thread. Good job, man. I've pondered using flame for crusting, but I've yet to make the leap.

It kinda did take awhile- like 15-20 min or so. About the same time it would take to sear on all sides in a pan. It's like pressure washing as you only do one little area at a time. Now I only had a $10 Home Depot hand held propane torch.

I also was concerned it had been a year in the freezer, but it had a good FoodSaver vacu seal and for the price I had to give it a whirl. It turned out great- tender and great flavor. No freezer burn or anything off.
