Prime Rib cook NYD

Im very proud of this cook yesterday. So im posting it.

I've never cooked a prime rib and was concerned about messing it up. its basically a 100 dollar plus roast. 6lbs from costco at 17.99/lb.

Rub consisted of the following:
3tbs black pepper and salt
2tbs garlic powder, oregano, thyme, and rosemary

Applied the rub and let sit to warm up to room temp for about 2 hrs.

Smoked with charcoal and some mesquite wood for 3 hrs till the internal temp got to 130 (medium rare).

Took off and wrapped it butcher paper and set into an ice chest for 2-3 hrs while dinner guest started showing up. Tested the temp in the ice chest about an hr before slicing... it had raised to 135. Just as i read it would do. Perfect.

Really came out great.

Looks great, I would say medium not med rare but regardless looks delicious

I would agree on the medium. especially in certain areas. Temp gauge said 130 when i removed. according to "tha interwebs) 130 was med rare.

Next time i will remove at 125 degrees.

Still was almost fork tender. Had a prime rib sandwich today to finish it off.

I did this one on thanksgiving, took off at 118, I would say it was mid rare(-)
