Potstickers

My wife and I aren't really Valentine's Day people, so rather than go out to eat we decided to cook at home and try something new. We did some ginger sesame pork potstickers with a thai chili pomegranate sauce. They turned out really good and photoed well so I thought I'd share with the board. Anyone else have success making potstickers at home?

aint nobody got time for that. ill never understand people who make their own pasta and shite, like there's just no way the taste is worth all the effort and mess.
on that same note, i got laughed at by a buddy for using store bought taco seasoning instead of making my own. we did a taste test with friends and every single person picked mine

Stuffed pasta such as ravioli, tortellini, etc. taste better imo. Havent tried potstickers, but I have a feeling using homemade dough may be worth it for taste and mouthfeel.
Also, with the right equipment, pasta isn't hard to make at all.

They required a decent amount of labor, but it's always fun trying to cook new things. We had a lot of fun making them and enjoyed eating them even more.

It added a nice crunchy texture to them. You just dip the bottom of the potstickers in water and then into the seeds, very minimal additional work.

I like dropping some cornstarch water in the pan so you get the tuille that connects all the dumplings

Happy to provide it.
1 pound raw ground pork
1 cup shredded kale
1 inch fresh ginger, grated
2 cloves garlic, grated
2 green onions, chopped
2 carrots, shredded
1/4 cup low sodium soy sauce
2 teaspoons sesame oil, plus more for cooking
black pepper
40 round wonton wrappers
1/3 cup raw sesame seeds
For the Sauce:
1/2 cup sweet Thai chili sauce
1/4 cup pomegranate juice
2 tablespoons low sodium soy sauce
1/2 cup pomegranate arils
You simply combine everything (minus the wonton wrappers and sesame seeds) together, then assemble the dumplings. We had to use a cookie cutter to make the wrappers round rather than square. Place a small amount of the mixture in the center of the wrapper, dab water around the edge of the wrapper, and fold together, making sure to crimp the edges. Then dip the bottom of the dumpling in water, and then in a shallow bowl of sesame seeds.
In a pan over medium heat, use a couple tablespoons of sesame oil, and when it gets hot, place the dumplings in the pan. Cook for about 2-3 minutes, lower the heat and add 1/4 cup water into the pan and cover. Let them cook for 5 or so minutes, covered.
For the sauce, just mix the ingredients together.

It depends on the pasta. There are some pastas there are difficult to source. Plus, fresh pasta is awesome.

Soji had a potsticker special a few weeks ago and they were great. They had short rib in them. Looks like a lot of work but yours looks great!

I was intrigued by your post a few weeks ago, so I decided that I had to try these out myself. Followed your recipe for the most part, plus and minus a few things. I was feeling extra Chinese, so i paired them with pulled pork bao buns. Appreciate the share!
