In the mood to try my hand at throwing together a turkey and sausage gumbo with all of the Turkey day leftover bird. Curveball is that my little guy has a gluten allergy.
Anyone know of any gluten free roux they would recommend?

I used Paul Prudhommes rouxless gumbo recipe and just brown gluten free flour.
Been doing it for 8 years now and no one can tell the differnece, well I do feed Yankees so what do they know

what gluten free flour do you use? a coconut flour? almond flour?
