I brown my chicken until it is falling apart and some is sticking to the bottom, then I deglaze with a Chardonnay. Remove from pot, then start the same process with the sausage (homemade). Then I make my roux. I Debone the chicken before I put it back in.

That roux isn’t dark enough and looks burnt. I don’t have a roux pic, but this is the final product.

I always brown my chicken first then roux in the same pot.
