Pork Butts

Rough and ready to smoke on the Primo tomorrow morning.
My meat thermometer wasn't working so I pulled them off the Primo, wrapped in foil and finished them in the oven.
Had to use this handy little piece of high technology instead.

Bark is ok but got a little soft because of the wrap.
Used Aaron Franklin's rub-1/2 salt, 1/2 pepper. Added a bit of paprika and red pepper too.
A bit too much salt for me-I'll cut back on it next time.

Got a nice smoke ring on the meat.

Plenty of moist, tender pork. 6 quart bags for later eating and sharing.
Anyone hungry??

I smoked one using the Snake/Fuse method on my new Weber yesterday and it turned out mighty fine.

Lump charcoal with some cherry wood pieces.
Damn remote thermometer is not reading the food temp correctly.
Shows internal at 217F and it's only been on for 3 hours..
Grill temp seems to be reading correctly.
