Is this 175ºF internal temp? 175º oven temp for 80 minutes?
no worries. Internal Temp. I am super anal about using probes (twss)
since I cover I don't put into a pan until a bit later and allows the cubes to get more bark. covering braises the meat and help from drying out.

I often see stores with brisket portions instead of whole. May try that side by side with chuck.

Trade Joes is one and surprisingly at Rouses I found several brisket point cuts only, which were very reasonably priced.

Trying my luck with this today. Just cubed up a Chuck and put a little mustard, Killer Hogs AP & BBQ seasoning. Just threw them on the grill. I'm going to check on them in an hour. I'm going to get the internal temp to 175-180, then throw them in a pan with more seasoning, butter, and a little sauce. I'm going to cover it and let it go another couple hours.
