Pimento Cheese recipe: It's Masters Week, prepare accordingly

Story from one of my favorite authors, Wright Thompson. He's equally adept at writing about food, liquor, and sports, passions many of us share.

The recipe (serves 20)

Extra sharp cheddar. Two 10-ounce packages.

Two small jars of pimentos

One and a half teaspoon Worcestershire

Two teaspoons grated onion

One whole clove garlic

Pepper and salt

Mayonnaise


Grate cheese coarsely. Add pimentos, Worcestershire, onion, garlic. Use enough mayonnaise to achieve right consistency (it should be easily spreadable but not runny). Add salt and pepper to taste.

The egg sandwich and masters club are supposedly good. And cheap as shite, i think a pimento is like $1.50.

And beer is only $2.

Somewhere in that neighborhood. The only thing they jack the price up on is the merchandise.

Read his story. Like his stuff. Masters pimento is good. Everything there has survived inflation. Insane how cheap it is. Best week of the year for me outside duck season.

My pimento cheese improved dramatically after I stopped using the small jars of diced pimentos and switched to the Italian style roasted red peppers in a jar. Definitely more flavor in the big halved roasted Italian peppers.

throw in some diced pickled jalapenos to kick it up just a bit.
