I’m well aware of the chemistry of forming chemical bonds between meat proteins and seasonings/ingredients. Putting a liquid on meat does not always equate to the bonding of chemical compounds between the meat proteins and the bonding agent’s compounds.

I’ve always preferred Tabasco pepper jelly over cream cheese, but this mango pickapeppa sounds intriguing…

Homemade pepper jelly is the way! The store bought can't hold a candle to it. I make it and put some of 5-7 homegrown pepper varieties in it. Changes every year and often changes from batch to batch.

A lot of places make it tight like jelly for pb & j, pepper jelly needs to be kind of runny.

I made a batch 2 years ago with Tinidad scorpions and Carolina Reapers in it (pit and seeds removed). That jelly is awesome but the heat is unbearable after 2-3 crackers.

Jamaica, where our sauces are proudly made, was recently impacted by two hurricanes, Hurricane Beryl in July and Hurricane Rafael in November. These storms caused significant disruptions to production and logistics, affecting our ability to maintain consistent supply.

We are actively working on recovery and resuming production, and we are optimistic that new inventory will be available soon. We appreciate your understanding and continued support during this time.

I love the stuff, I use it on greens, cabbage, beans and as a little kick for my chicken marinade.
