I've noticed that in my advanced age i have less of a tolerance for salt. Things I've eaten all of my life taste saltier these days.

Maybe my idea of salty is that most things taste salty now (advanced age) and I like it when I get the salty taste.
For others:
As far as blood pressure goes, I have excellent blood pressure 110 / 68, due to Toprol XL and other heart drugs like Amiodarone. I could be wrong, but I think my warfarin also contributes, maybe my statin, too.
When they take my blood pressure at the doctor's office and comment how nice and low it is (sometimes too low as in whatever over 45), I tell them I have the best blood pressure money can buy. The Toprol XL beta blocker, warfarin, and Amiodarone are because of my mitral valve replacement and subsequent pacemaker installation. They want to keep my heart beating slowly and consistently and drugs are the way to do that. I also had atrial flutter and up to 5 PVCs a minute at one point after the surgery, so they remain concerned about that. The pacemaker is because my heart would stop beating for 5 seconds, then start back. any more than 5 seconds and I would pass out.
At this point, God as carried me through 15 years of bonus time on earth. He has something planned I have not yet done I guess.
Anyhow, I was not saying anyone here should eat more salt, only asking if you liked it.

The older I get, the easier it is to tell which cook/chef smokes by how they season things. Saltier tends to be a heavy smoker. I like salt, but don't want it to taste salty. I'd rather it enhance what's being cooked than become the taste.

I don't like salty food.
I never ever add salt to a recipe. I find that unless I am using all "raw" ingredients there is enough already.
Stock, cured meats, etc. is already loaded unless you make it yourself.

Ask any chef and he will tell you without salt you have nothing. Salt brings out the flavor of whatever it is you are eating.

Do you mean in addition to what it already calls for, or do you mean that you don’t put any salt in a dish even if the recipe calls for it?

It’s almost impossible to add an unhealthy amount of salt to anything that’s made fresh at home. Americans have a huge salt intake from processed foods.
