Parrain's Crawfish Etouffee ...

Anybody know anything about their etouffee recipe?

While my own recipe is good (made with a roux and has no cream of whatever soup or ro-tel in it), theirs has a certain "something" about it that I can't put my finger on.

Was hoping maybe someone in here had some intel. TIA

That soup probably pre-dates etouffee.

Is it the same as the Chimes, like a lot of their other stuff? Only asking because I've wondered the same thing about the Chimes etouffee myself...
