Beef fajitas and you are absolutely correct. Chicken? Negative.

Agreed, however I am a huge fan of El Tiempo Cantina in Houston. Best fajitas of any kind. Period.

They have expanded. The location we have in Katy is a big "No"!! Too damned pricey. We got appetizers and shared. Quesadilla and nachos. Nah.

Their frozen margaritas? Awesome! Drink 2 and can't feel your face.

Your marinade sounds good, but why a skillet and not a grill? Sure cast iron for the steak works but you have to cook chicken to a higher internal temp for it to be done...
Also, I filet my chicken breasts if they're too thick so they can cook quicker.

Skillet is not gonna work for fajitas.

The tortillas are what does it for me. Best I've had and never had anything close in La. Best I can do here is buy the ones Kroger makes then heat them up in the grill after the meat is done on foil.

Their salsa was mentioned too. The red salsa (they added a cilantro ranch type..meh) is awesome. And ALWAYS tastes the same. Location to location, time after time. Never one time too garlicy, the spice level is always the same. I don't know how they do it.

It's as consistent as a macro brew beer. Bud or miller lite.

I like Pappasito's fajitas just fine.

El Tiempo, Pappasito's....I wouldn't be upset if I was dragged kicking and screaming to either.

El Tiempo is the place for Fajitas, their avocado cannonballs stuffed with shrimp are pretty solid as well. Original Ninfa's on Navigation has them beat for margaritas.
