paella for dummies

wife bought a paella pan and it came with a pretty simple to follow recipe
basically sausage, onion, tomato, garlic, peppers, saffron, broth, peas, wine and rice and I used clams, shrimp and scallops as my seafood

I came out really good except all I had was arborio rice so it came out more like risotto than paella. Very tasty but very rich and thick

what rice is the preferred grain? long grain or short grain?
wash the rice?
it would have been perfect without the gelatinized gluten of the arborio

also next time I'll try it on the pit instead of the stovetop for more even cooking and maybe a little smoke

Bomba is my go to paella rice. Rice type is esp important if you cook it in the traditional, uncovered way.

mine was a little too creamy with the arborio even though I didn't stir
still tasted great though

Take a look at the page I linked. The guy has a table that basically serves the same function as a calculator, at least as far as rice amounts and volume for any size pan.

It looks like my link is down at the moment. I have to admit that I've never made Paella, but I do have a 14" pan for it. Do y'all think I could do a reasonable facsimile on the stovetop?

Paella is the pan, not the dish. There are many, many possible paellas.

I did stovetop last nite
just move the pan around a bunch to keep cooking evenly

steep the broth
brown the sausage, sweat the veggies
add th rice and fry it
add half the stock, let absorb, then the other half...never stir
poke the seafood down into the rice at the end
add the peas than crank the heat to caramlize the bottom rice
