Oyster Dressing Recipe

Anyone have a good recipe for this? Been using the Google Machine, came across a bunch but not sure which to choose.

I started this same thread yesterday. This is the answer I got:

Oyster Dressing "Grand-Mère"
CONTRIBUTED BY JOHN BESH
• ACTIVE: 40 MIN
• TOTAL TIME: 1 HR 40 MIN
• SERVINGS: 12
1. 2 ounces slab bacon, cut into 1/4-inch dice
2. 1 stick unsalted butter
3. 1 celery rib, cut into 1/4-inch dice
4. 1/2 green bell pepper, cut into 1/4-inch dice
5. 1/2 small onion, finely diced
6. 2 large garlic cloves, minced
7. 2 tablespoons sweet paprika
8. 1/2 teaspoon garlic powder
9. 1/2 teaspoon cayenne pepper
10. 2 large baguettes (about 1 pound), cut into 1/2-inch dice (12 cups)
11. 4 dozen shucked oysters plus 1 cup oyster liquor, oysters halved (2 cups)
12. 2 scallions, minced
13. 2 tablespoons chopped parsley
14. 4 large eggs
15. 1 teaspoon hot sauce
16. 1 teaspoon kosher salt
1. Preheat the oven to 350°. Butter a 10-by-14-inch shallow baking dish. In a large skillet, cook the bacon over moderate heat until crisp, about 5 minutes. Add the butter and let melt, then add the celery, green pepper, onion and minced garlic and cook until softened, about 8 minutes. Add the paprika, garlic powder and cayenne and cook for 3 minutes, stirring occasionally.
2. Put the diced baguettes in a large bowl. Spoon the bacon mixture on top. Add the oysters and their liquor along with the scallions and parsley.
3. In a small bowl, beat the eggs with the hot sauce and salt. Pour the eggs into the bowl and mix everything together. Scrape the dressing into the prepared baking dish and bake in the upper third of the oven for about 45 minutes, until heated through and crisp on top. Serve hot.
MAKE AHEAD The baked oyster dressing can be refrigerated overnight. Reheat before serving.

I thought I heard someone say they saw an oyster dressing recipe from Brigsten's in the New Orleans Advocate yesterday.

I'll give you one that's been in my family for 4 generations.
Bread crumbs ( I cheat this and buy the bags(2) of italian bread crumbs)
3 pints oysters(I pick through them for shells then put them through the food processor)
2 mild/2 "hot" jimmy dean breakfast sausage
Green onion 1 bunch
Parsley 2-3 bunches depending on size
Celery 6-8 stalks
Yellow onion 2
Bell pepper 2
Garlic 4-6 pieces
Unsalted butter
Cayenne (I use slap you mama too)
Salt
Night before you need it
Brown sausage - remove
Sauté veggies till sweating in sausage drippings and 1/2 stick unsalted butter
Mix sausage back in. At this point I break up the sausage with a wooden spatula and add in another 1/2 stick of butter.
mix in bread crumbs and oysters and oyster juice
Season to taste
Cook down.
Butter the sides of a casserole dish and spoon dressing in and let it sit in the fridge until the next day. The next day, put a few pats of butter on top, cover and cook for 45-60 minutes at 350. Remover cover and cook for 15 more. You may want to play with the times....I like a crunchy crust on top.
