Oven ribs

Attempting oven baked ribs for the first time. Feeling too lazy to light the BGE.
Two hours, uncovered, at 350. Rubbed w Dizzy Pigs Raging River. Will sauce a little near the end.
If you do oven ribs, what’s your method?

I do Alton Brown's 8-3-1 method:


Alton Brown's Baby Back Ribs

This recipe makes several batches of dry rub. If more rub is needed, it can be extended by any amount, as long as the ratio of 8:3:1:1 remains the same.

2 whole slabs pork baby back ribs

Dry Rub

8 Tbs light brown sugar (tightly packed)
3 Tbs kosher salt
1 Tbs chili powder
1/2 tsp freshly-ground black pepper
1/2 tsp cayenne pepper
1/2 tsp jalapeño seasoning
1/2 tsp Old Bay Seasoning
1/2 tsp rubbed thyme
1/2 tsp onion powder

Braising Liquid

1 cup white wine
2 Tbs white wine vinegar
2 Tbs Worcestershire sauce
1 Tbs honey
2 garlic cloves, chopped

1. Preheat oven to 250 degrees.

2. In a bowl, combine all dry ingredients and mix well. Place each slab of baby back ribs on a piece of heavy-duty aluminum foil, shiny-side down. Sprinkle each side generously with the dry rub. Pat the dry rub into the meat. Refrigerate the ribs for a minimum of 1 hour.

3. In a microwavable container, combine all ingredients for the braising liquid. Microwave on high for 1 minute.

4. Place the ribs on a baking sheet. Open one end of the foil on each slab and pour half of the braising liquid into each foil packet. Tilt the baking sheet in order to equally distribute the braising liquid. Braise the ribs in the oven for 2 1/2 hours.

5. Transfer the braising liquid into a medium saucepot. Bring the liquid to a simmer and reduce by half or until of a thick syrup consistency.

6. Brush the glaze onto the ribs. Place under the broiler just until the glaze caramelizes lightly. Slice each slab into 2 rib bone portions. Place the remaining hot glaze into a bowl and toss the rib portions in the glaze.

I use this method that I found on Chowhound years ago: apply rub, refrigerate 24 hours wrapped up in foil, put the wrapped ribs in a 325 oven for 2 hours. Finish off on grill or broil.

90% in the Instant Pot and finish at 450 in oven for 15 mins

Season with smoked paprika, then pack on some brown sugar. Wrap tightly 3 times with foil. Place in 250 degree oven meat side down for 2 hours. Pull let sit an hour. Open and broil for 5-10 mins. Eat.

I’ve always put cut ribs into 3-4 ribs size, season with preferred seasoning, Worcester, bell pepper and onion, wrap with foil place on baking sheet. Bake 325 for 2.5-3 hours (disclaimer: depends on oven variation and altitude lol) pull out unwrap, be careful steam will be hot. Turn on broil, recover sheet with foil, put ribs in under high broil for 5 mins or so, pull out lightly sauce if you like sauce put back in and broil for 5-10 mins. Taste great! That’s for baby backs

If doing most of the cooking in the oven, I'll season the ribs with salt, pepper, garlic powder, cumin, dark chili powder and paprika and allow that to sit on the meat for a few hours.

I'll then heat the oven to 275 and put the ribs in an oval baking pan standing on edge on a rib rack I have for such occasions. This keeps the meat 1/2 inch off the bottom of the pan. I'll then add some water to the pan, cover it and put it in the oven for 2 1/2 hours to cook.

Then I'll fire up my grill and finish them off by searing them and applying my BBQ sauce. When done, they are fall off the bone tender.
