Otis, Question on Your Tomato and Bread Soup

Otis, I made this soup over the weekend. I made the tomato base part of the soup Saturday so I could check seasonings after it had been refrigerated overnight before adding the bread. It was very good. I used more bay and oregano because I was concerned the bread would dilute the flavor when I used the immersion blender. I had a parmesan rind, so I threw that in, also, which was good, though it doesn't need it. Flavor would have been fine without it.
Once I added the bread croutons, simmered and then let those sit as instructed, I pureed the soup some with the immersion blender. I didn't realize how much the bread would expand. Forgot about that. I found the flavor to be diluted, but still good.
My question is have you made the soup, skipped the pureeing and used the croutons atop the soup?
This is a very good soup for those looking for one. It's in the stickied soup thread.

I made it last night for use tonight. I puréed the whole dish with the stick blender. It was thick.
The recipes vary...some are only partially blended, leaving some of the croutons whole. Gonna be good either way.
When I bring it to temp tonight, I may need to thin it with a bit more stock, and I'll reseason. Now I'm hungry...

I added additional stock the first night because I could tell that it was going to be more of a sauce than a soup before I used the stick blender. I was also still debating on leaving it brothy and adding they crouton to the bottom of the servings before spooning the hot soup over them. I think I'm going to do that next time. That's sort of a personal preference thing with this soup, though. If I do that, I'll make the croutons a little smaller since they expand a good bit. Could be the bread I used which was one of those plain little rustic bread loaves from the grocery. I'll definitely make it again. It's a very good simple soup to make. Thanks for posting.

GG, a good heavy pinch of crushed red pepper is a good mod.

I agree but my crowd included some pepper sensitive folks, so I used white pepper
