It all depends on whether you want Natchitoches style or New Orleans style. New Orleans is more runny I believe. But I’ll have to consult Apache Driver to be certain

Bone in meat gives it flavor. I don’t see how that would make the consistency creamy.
As others have said, mash some of the beans if you want it creamy. It’s very easy.

Two cans blue runner cream style and two cans trappeys whole kidney beans can't be beat. Sautee that trinity along with some smoked sausage. Have yet to taste someone's dry beans that were better.
