It means burn the frick out of the outside (the picture in this thread sums it up). Pretty amazing too, the one I had was cold and completely raw in the center and the outside looked like they held it over a propane jet burner for twenty seconds or so. It was really a shocking preparation since I usually go for barely cooked steaks.

I'd get a Pittsburg Blue filet if I ever went to Mr. John's, but at a lesser place I'd just go blue rare on that cut.

Pittsburgh is a char on the outside, cooked to temp on the inside...... It is obtained by adding melted/liquid butter to the outside and seared.... If charchoal - it butter created a flame, if broiler - a tight sear.

Its not burnt, as in char taste.... If it is, whomever prepared the steak for u didnt do it correctly.

We'll be there. Probably watching it at the Evans/Ogden office if you know where that is. It's on the right just as you start going down Capitol and will be roped off with a bunch of kids running around. Which float are you on?

our float is the Krewe of Cotton but I don't think we are always in the same float lineup order.

No, we're heading back to reunion. They're having a band at the beach that afternoon/night. Have some friends coming up from BR and we'll have 4 kids running around so it would be tough to pull off. Otherwise I'd love to see them.

Good responses ready.

The contrast between the soft juicy interior and crunchy charred exterior is what does it for me.

I love it so much I worked tirelessly to come up with a process for doing it at home on the grill, difficult for most because most home grills don't get hot enough to quickly char the outside while keeping the inside on the rare side.
