NY Times article about Gumbo in NOLA

It's rather lengthy
I follow the Munch Factory's facebook page and they got a mention in it which is what drew my attention to the article

"At Turkey and the Wolf, a popular sandwich shop in the Irish Channel neighborhood, Mason Hereford cooks a gumbo that is notable for containing ingredients that purists consider heretical, including tamarind paste, potato chips, Worcestershire sauce and, occasionally, leeks.
“I don’t recall anyone eating it and saying it’s gross,” Mr. Hereford said. “But I have had people eat it and say, ‘This is not gumbo.’”

I have used a rubber cake spatula multiple times for my roux. Always held up well

Maypop sucks. Worst Chinese food ever plus I had to spend like 60 bucks just to feel a little full

Powerman - I am so behind the times. I would have never considered the NY Times any kind of authority on anything Cajun or Creole.
