I tasted some last weekend and it was pretty damn good. It tasted like a great étouffée inside of boudin skin.

Hah......Steen's.
My dad showed my LONG ago the beauty of putting Steen's syrup on hot boudin.
That is what you call Bi-Winning.
BTW, I wanted to try out Johnson's Boucanierre (sp?) today and they were closed. Only open from 7-9 am on Saturdays. Was very disappointed. That's a tight window IMO. They should at least stay open until noon.
ETA: NuNu's seasoning IS very good.

Come to think about it (correct me if I am wrong), you can't get boudin anywhere in the city of Lafayette, except Johnson's Boucaneirre.........it's all on the periphery: Best Stop in Duson, Don's on I49, Billeaud's in Broussard. We need a drive-thru boudin place in Johnston street.
AMIRITE?
Of course I am.

You may be onto something here... Thankfully I live on the edge of youngsville and Broussard so I have great selections around me.
