"Not enough butter" is a phrase never heard in my house. But you may be right and I just need to slow down. I guess I've been spoiled all these years using traditional non-stick pans and having a plate of scrambled eggs in 1 minute.

I cook my eggs in a stainless steel skillet often. But I can get them done in just a few min. I often remove the skillet from the heat completely and stir / scrape so they don’t overcook, then add them back to the heat and repeat over and over. Plate the eggs just before you think they are done and they will still cook a bit on the plate. They could d out nice and fluffy and moist every time.

Search up some YouTube vids of famous chefs doing scrambled eggs. They all have good methods.

It’s legit. Cheese won’t stick. I just use a small amount of cooking spray when cooking eggs or really anything.

Bought my wife a set of LeCreuset non-sticks. I’m currently the only egg eater so I’m the exclusive egg cooker. They work great for us with everything we’ve thrown at them.

ETA: cheese comment: with no spray, butter or oil, 1 slice Sargento cheddar, 1 kosher dill spear - This is a family favorite. The pickle is wrapped in the cheese as it softens. Never even thinks about sticking and the cheese gets very crispy.

Go to Restaurant Depot and buy a blue silicon handled Winco. 20 bucks.
