Is there any sushi place in NOLA metro area that actually gives a shite about its rice?

It seems like every place here simply dumps plain sushi rice in a rice cooker and cooks it until it is sticky and dry, then serves straight from the electronic cooker. It is flavorless. I don't think they use vinegar or any other seasoning.

Horinoya
Kanno
Shogun
Kyoto
Sushi Brothers
Occasionally go to the westbank to Daiwa or for a quick lunch to Geisha.

Have also been to these multiple times:
Hana
Chiba
Wasabi
Little Tokyo
Mikimoto
Rock n Sake
Sake Cafe

I have not found any places here that seem to pay any attention to detail in their rice like in NYC or west coast.

That's because the majority of people in the states who eat sushi don't realize how integral good rice is to good sushi. Therefore, restaurants don't waste time making good rice. A lot of Japanese people will tell you that the rice is the most important part, followed immediately by fish freshness/texture.
