Oooh, I forgot to add:
The Picayune Creole Cookbook. I have the 1910 and 1942 editions. It has all of the old school recipes, to include a boudin blanc made with rabbit, heavy cream, and stale French bread that I have always wanted to try.

I have both and every Link recipe I’ve made has been awesome. The Smothered Pork is my favorite....so simple.

I have a copy of Great Chefs: Louisiana New Garde. I love it for a lot of reasons but mainly seeing all these now elder statesmen/women of the Culinary scene as young Turks doing wild things like pairing corn macaque choux with shrimp remoulade.
