I am sure everyone has somewhat differant taste.

Also a few places I have tried seem inconsistant with the taste.

I just know what I like and as stated before, when you get the chance to try 20 differant varities in one day it gives you a great chance to compare.


That said I forgot all about Bourques. I haven't tried it in 20 years, he was friends with my grandpa back in the day. I need to make a trip down 190 one day, just scared to see whats left of Opelousas.

billys messed up the Ray's recipe. I grew up in texas before i moved here 10yrs ago. every year when i was a kid we came to melville to see the family. my mom brought home 50lbs of rays a year i swear. now i dont stop at all for rays. Billys is awsome. i will have to check out the new Rays

new rays is just as good as it used to be.

people say the cracklins are good. I just dont see how people can eat that nasty shite.

Is the Ray's you are talking about, the Ray's that used to be by the railroad tracks in Opelousas, near the fire station?

old rays (now billy's)was located just as you came into town from 190, by the tourist center/meche's donuts/graveyard

or at least it has been since I was born in 1979.

ok.. there was a place called Ronnie's that was by the fire station.. Ronnie's was awesome..

The Billy's I'm talkin about is Billy Frey's place in Krotz Springs..

I think they closed that one, this is the same Ronnies that is in Baton Rouge on Florida

I believe you are correct, ronnies is definitely closed in opelousas, but they opened something up in baton rouge area.

It's the same Billy's that is in Opelousas. They make the boudin in Opelousas and drive it out to Krotz Springs every day.

The Billy's in Opelousas also makes Ray's boudin based on the recipe they bought from him. I haven't tried their rendition of Ray's boudin, but I'm not a big fan of the Ray's boudin that is sold on Highway 182 on the south side of Opelousas.
