Have had a pellet smoker from Green Mountain Grills for about 10 years. Love it.

Update:

PK-360 Graphite being delivered today. Cant wait!

Any tips on how to start using this thing? Thinking I'll do some sausage tonight or tomorrow just to break it in.

With new grills/smokers I always get the really hot and leave it for a little while to burn off anything left over from the production. Then I oil the grates really well.

Get a little more if you haven’t yet. Increases the functionality by giving more capacity and more zones

Think of your cooker as 4 zones now.

Direct close to coals on main grate (steak, burgers)

Direct further from coals using little more above coals (I like to sear chicken and pork chops here for less char)

Indirect with little more is 3 and 4. the top is hotter than the bottom and it’s noticeable in cook times. So if you need to speed up or slow down, you can move around on the indirect side.

It’s not a big grill, but the functionality is great

Just put it together. This thing is super high quality. Even the plastic shelf is heavy duty. All components are heavy and solid.

Very happy with the build.
