I will still be experimenting a little. My neighbor (who is a chef BTW), said it was fantastic. He said the shrimp alone was missing something savory, but with a bite of both grits and shrimp together, he said it works well.
He also said it needs a little crunch, so I may add cashews and/or water chestnuts

This very rustic video from a very notable Nola chef Peter Vasquez has inspired me to cook fusion type dishes. This one is fantastic but he uses chicken. You could easily sub shrimp instead. Also sub your grits for the rice noodles he uses. It's grainy and there is a 2nd part you can find on youTube if you like. In fact I will start another thread to see if anyone remembers chef V- nostalgia.
