Pico

Fine dice 2 cups of onion, white,yellow, red or a mix. Add 2 to 3 cups of fine diced and drained tomatoes. To drain, chop and place in a colander for 30 minutes or so.

Add2 to 3 whole, minced jalapeño peppers, 2 to 3 T of fresh lime juice, and 2 to 3 T of cilantro. Mix and enjoy.

Add salt to taste and that's a winner. I also add about a half tablespoon of vinegar. It will last in the fridge at least a week.

Good points. I usually skip the salt, counting on the chips for that, but I’m a low salt guy with pico.

Boil jalapeños, onion, and garlic with some chicken base. Strain and blend with a neutral oil and add lime juice and salt to taste. Makes a nice spicy creamy salsa

I don't think I've made any Pioneer Woman recipes except her restaurant style salsa. It's pretty darned good. You can modify to taste.

Restaurant Style Salsa
Pioneer Woman

Ingredients

1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
1/4 cup Chopped Onion
1 clove Garlic, Minced
1 whole Jalapeno, Quartered And Sliced Thin
1/4 teaspoon Sugar
1/4 teaspoon Salt
1/4 teaspoon Ground Cumin
1/2 cup Cilantro (more To Taste!)
1/2 whole Lime Juice

Preparation

Use a 12-cup food processor, or process in blender in batches.

Combine ingredients in blender or food processor. Pulse until you get the consistency you'd like, probably about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.

Refrigerate salsa for at least an hour.

That recipe is very similar to what l do with extra tomatoes from the garden in the summer. Lime juice, garlic and fresh cilantro are key. Mix to taste

28 oz Whole can tomatoes drained. 1-3 jalapeños or more depending on the heat you like.
Fresh cilantro, chopped fresh onion, I like sweet onion myself, chopped green onion. Squeezed lime juice, and Salt to taste.

I will blend a little bit of the tomato juice with the jalapeños (whole and washed minus stem)

I will add the fresh cilantro and then 28oz can of while peeled plum tomatoes. I don’t blend till smooth. I like a little chunkier than purée. Pour in container. Squeeze 1/2 lime or to taste, add a little salt, add chopped sweet onion and green onion. Then stir. Taste and add ingredients to taste if needed and chill. Enjoy.

I have also done fresh roasted tomatoes

My go to Salsa is

1 14.5 oz can rotel
1 14.5 oz can whole tomatoes with juice
2 canned (not pickled) jalapeños chopped fine
1/4 cup yellow onion chopped fine
1/2 tsp garlic salt
1/2 tsp cumin
1/4 tsp sugar

Place all ingredients in blender and pulse to desired consistency. Refrigerate leftovers.
