Mystery Sauce - Looking for direction

Local Cajun/Creole restaurant in Denver serves french bread with this dipping sauce. I couldn't get much information from the restaurant owner, but would really like to make it at home.

The oil half has some nice spice kick to it, and I'm assuming the cream side is possibly a version of your traditional Cajun dipping sauce, but it didn't quite taste like any I'd had. Is this a common dipping sauce in restaurants, does it have a name?

Remoulade and au jus?

Doesn’t seem traditional to me but I’m pretty dumb.

The red portion is definitely a spicy oil of some sort. Almost what you'd see at the top of some Jack Miller's BBQ sauce.

Not anywhere I’m aware of. Our bread is served with butter or oil/balsamic/etc like everywhere else.

Sucks the restaurant wouldn’t tell you what’s in it. I ask what’s in things all the time. Maybe next time go with someone that can pretend they have allergies and wants to know what’s in it.

Ask the owner where he/she is from, and where did they find that concoction. I grew up in NOLA and have lived in Lafayette for the last 35 yrs and never seen anything like that before. Most bread dipping oil consists of EVOO, various herbs, fresh garlic, and red pepper flakes. Balsamic vinegar and fresh grated parm can also be added.

That red looking oil dip appears to be EVOO, paprika, red pepper flakes, and chili paste. Was the cream sauce sweet , spicy, what flavors did you taste ?

Here’s what I could find in a review -

My guess it’s a mixture of Sysco Brand food sauces. Not traditional. If I had to guess a garli butter sauce with some sort of hot sauce mix.,

Never seen such a thing in LA, but it sure looks like ranch and an oily vinaigrette, as previous poster quoted from a review.

Probably because it has no Cajun/Creole origin LOL! And he doesn't want to be outed.

The owner is from NOLA, and their food is the most authentic Cajun/Creole food I've had in Colorado. The sauce is usually a hit with everyone that tries it, but it seems like it's his own concoction.

That's what it looks like to me too. It depends on the heat/acid content. But I'd say garlic, butter, tabasco/Louisiana hot sauce.
