My way of doing Corn beef Hash

I'm the only one in the house that likes it, so this is a single serving.
One patato, one small onion.
We only had one big arse onion, so I just used a shallot.
Low boil your potato chunks.
Had these thick sliced corn beef from the deli, just slice them up and start buttering your skillet. (always looking for a reason to use my wife's homemade garlic butter)
Combine everything together.
(drain & rinse your potatoes)
And my secret ingredient??
Local Salsa!
Simmer on medium until it looks good to you.
Fry up a couple eggs, plate, pour youself a juice and enjoy!!

Gosh, I love hash. It’s a great way to use leftovers. When I’m feeling really lazy, I’ll use the frozen, small-cubed, “southern style” hash browns out of the bag....

CB hash is one of my absolute favorite breakfast dishes. My favorite is at Dante’s in N.O.
