Don't know if this is the reason, but burnt garlic can make a dish bitter.

Did you use garlic? If so and you put it in too early, it will most definitely burn and become bitter.



Just a thought.


Also, I almost always use a little wine when my veggies are cooking down. Not a lot, but some. I think it adds another layer to the many layers of flavor.

The wine is why it’s bitter. Just use stock, IMO.

I don't know what you were making but it weren't gumbo
