That's just it - I didn't add any salt other than the bouillon but I doubled the recipe so I used 2 beef and 2 chicken. I should have known better. I am curious though if the mushroom bouillon is as salty. I am going to have to look around a for it as I could not find it in local stores (HEB & Kroger).

We found Telma Bouillon in Pittsburgh while visiting our son, who lives there. I think it is common there. Now we order it from Amazon, but I understand you can also order it online from Walmart. You local Wallyworld store might have it. We keep the beef, chicken and mushroom in the pantry, mostly because I like it.
All bouillon is salty. The mushroom is actually labeled as a soup cube (others are labeled as bouillon) and is not so salty as the others.
Better than Bouillon makes a mushroom stock paste and I think it might be pretty good.
You probably could just mince mushrooms and boil them in water to make your own mushroom stock.

I actually made it tonight, well not exactly, but used your recipe as a guide. Used bone broth and some veggie stock instead of bullion, it was a little heavy on the liquid but turned out really good.

I don't mind that in some soups and the wife prefers soup that way.
