We finally tried this place out over the weekend, and it was killer. Everything is hand made from pastas to pizzas, and there was nothing we had that was not exceptional. Often times I go into a place let down, because I hear great things and have super high expectations. Meribo met those expectations though.
My personal favorite was their "casarecce," which is a spiraled pasta covered with a "wild boar and sweet pepper ragout." It had eggplant in it, which I normally do not like, but damn even the eggplant was delicious. My wife's favorite was their "ham & cheese" white sauce pizza. This had a truffled honey drizzled on top, and it was exceptional.
Apparently they do happy hour every day from 3-6 and all day and night on Wednesdays where they sell their pizzas for $8. For the quality of the food the prices are not bad at all at the regular price, so the $8 is a steal. The server told us they run these prices for take out as well.
I highly recommend trying this out if you ever are looking for some Northshore dining. I've seen people talk good about it here in the past, which is what had me wanting to try it for so long. Great stuff!

It's run by a communist and the front of house is comically bad, but it is good food. The Wednesday deal is one the best on the northshore.

My wife and I have been many times because we live nearby. Though I like it a lot, I think the menu is a bit adventurous for some palates which is why the place gets some hate. Most of my experiences mirror yours, however. Meribo is consistently good. The $8 pizza take-out is a godsend on busy work nights, too. Enjoy.

Yeah, I'm all ears on this. The chef seems to do a lot for local charities based on social media posts.

I gotta tell you, chefs (for the most part) run to the Liberal politics side of life and I have learned to just ignore it and eat their food unless it is absolutely egregious. Heck, if we apply that bar, you won't ever go see another movie either. All the actors are weirdos and leftists.
The dude at La Boca (which I used to frequent at least twice a month) hit that bar for me during the BLM thing for instance. I won't go there even though I loved the steak.

As long as they keep their politics out of the restaurant or business I don't care. The moment they politicize their business though is when I am forced to make a choice.

Meribo isn't a bad restaurant but I don't believe it warrants the hype some people give it. IMO the only good entrees on the menu are the burger and their pizzas, but the pizzas are super greasy and the toppings fall off the second you try to pull a slice out of the pie. Their pastas can be good but very, very inconsistent.
The best thing on the menu is the hot tot appetizer. The drinks are totally meh. The interior of the restaurant is also incredibly loud and unpleasant if it gets crowded. Agreed that the Wednesday happy hour is a good deal though.
