Would you combine those two items? I bought a marinated (and sliced) beef tongue and a huge bag of purple hull peas from The Mowata Store the other day and thought about slow cooking them together.

The peas will probably cook faster than the tongue

That’s the issue I had with it as well. The tongue is sliced in chunks about like a Cane’s tender, but the peas would mush up for sure. The package says the tongue is “stuffed” but not like a stuffed chicken, imo.

Maybe start the tongue and cook for an hour or two then add the peas. PH peas will cook in an hour or so.

Thank. I added pic above if you have any recommendations. I love lengua tacos but i want to work outside today while this cooks.

you can slow cook the tongue just like any other beef roast, just cover in liquid and let it roll in a crockpot or in the oven. Once it’s tender then do the peas. There’s no reason that won’t be good and you’re right lengua tacos are the best

Blue Iguana in Eunice has fire lengua tacos.

So I called an audible on the peas, and cooked them with some tasso I also bought from the Mowata. It is excellent. I also added a jalapeno I grew, as well as a chile off my ristra. The tasso is excellent, great smoked flavor combined with the peas. Good meal to watch first half of Saints game. Who dat! Fyi I have the tongue slow cooking in the oven with some locally grown squash and that will be supper.
