Pro-tip if using a bamboo roller. Wrap it in plastic wrap and poke a few holes in it to vent. It will save you from getting rice stuck in the roller.

I make it all the time, when we catch.
Tuna/Snapper/Whaoo etc.
One idea I did not see mentioned was calling ahead and buying your rice from Sushi restaurant. We struggle cooking the rice, so this is our solution

ive done it a few times. its fun and interesting to learn the process and tastes good if done right. but like others have said, by the time you get all the ingredients and with the hassle of making it, its just easier to go to a restaurant.
