Making gumbo against the clock doesn't leave a lot of room for error, so I think you did fine with the lack of time. If it has good flavor, you're in business. You can perfect it the next time.
Some folks don't like really dark roux, so while I prefer one, you can still have a decent flavor without a dark roux. The fried chicken and sausage give a lot of flavor, so when making that gumbo, it can be a bit forgiving in the flavor department.

Hell yeah....a drop or two of cheater bouquet and don't tell anyone. As long as the flavor's good, ain't nothing wrong with a lil color correction.
