That is my experience also. My gumbo recipes were from Mom, who got them from creole friends in Louisiana. All of these things took place before Cajun Seasoning was available, so Mom never used it and I don't either. Nice to know there are others like me who continue their mom's way.
Note to OP: Do it your way and it will be the best gumbo you have evr made. especially with it being the first you have ever made.
