Making a gumbo with no chicken

Stores here are completely out of chicken. Instead of putting shredded chicken breast, I’m trying turkey breast. Anyone done this?

I dont think the taste is different considering you will be tasting the juice of the roux and stock that it sits in. Chicken and turkey are both bird. However, the texture is slightly different, but it’s not noticeable unless you have a keen palate.
For example: The restaurant I worked at used to use turkey and sell it as chicken and sausage gumbo because turkey is cheaper. Nobody ever noticed. (Atleast no one said anything...)

Yeah, there's definitely the texture difference but the difference in taste comes from the stocks for me. Using a smoked turkey carcass brings a totally different kind of flavor as opposed to rotisserie chicken carcass.

If you like it, that's all that matters. But I personally prefer to keep my poultry and my seafood separate when it comes to gumbo. Most Louisianans would agree

Most people down here do not mix poultry and seafood into one gumbo. Very much an out of towner thing.

I love turkey and sausage gumbo. If you smoke the turkey, it's also excellent. I actually prefer turkey to chicken except in fried chicken gumbo like Paul Prudhomme's recipe, but I've thought about frying turkey pieces the same way. Just haven't gotten around to it.

I made pork temple meat and smoked turkey gumbo this week. Pretty damn delicious.
