The wine throws me a little as well. What does red wine do to a gumbo?

I have a buddy that puts some red wine in his gumbo. It tastes like he poured wine in his gumbo...I'm not a fan, but it isn't poison or anything.

The onesmost often availible on chain grocery stores are scrawny things. The one for order online out of Canada are fairly fatty as they are grown with the intent of being future foie gras mostly.

Bug...just a little advice. The duck usually makes more grease that chicken. Cook that bad boy a day ahead of scheduled serving. Refridgerate and then peel the grease off the top and heat...As they always say gumbo is better when it sits over night. Get that grease off bud!!! Everything else sounds great!!!

oysters are made for seafood gumbo. I never think about adding them in duck or chicken and sausage gumbo
