So it was good. I made a couple of changes.

1. I used bacon grease instead of olive oil
2. I did use more wine - a bottle plus 1/2 (drank the rest)
3. cooked it uncovered last 30 minutes after adding a corn starch slurry
3. served it over buttered egg noodles
