Brick is dark enough. Anything further is just personal preference. That gumbo is damn good looking. Mouton must've felt a little tight in his 32-32s yesterday.

I've never strained and have never had an issue. I don't think PP says to strain it, so it never crossed my mind to do so.
I don't think Donald Link's fried chicken gumbo recipe calls for straining the oil either. I think the debris is part of the intended flavor.

I strain out the bigger bits of "stuff". The oil will have plenty of flavor even if strained, assuming you fried the chicken in it.
