Having a cinco meal tonight. I make a pretty good tomatillo salsa where I roast all the veggies on the grill. But I'm tossing around the idea of putting them on a quick light smoke for a different flavor. But I'm hesitant at the thought of it turning out like shite and running my salsa
1) Smoked salsa...good idea?
2) suggestions for wood? I was thinking something lighter like apple
TIA

Always a good idea. I smoke my tomatoes most the time.

Excellent. What woods do you like to use?

We always smoke the tomatillos when we make a salsa. It's great.
We don't smoke the other veggies, so it's never overpowering.

Update...the salsa was a success. Everybody liked the subtle smokiness. Heres a mini pictorial, I thought about taking some pics part way through.
I halved 8 tomatillos and 2 jalapenos and smoked them at 225 for 30 minutes with a little bit of apple chips.
Then I moved everything over to the grill to get some char, along with my onion and garlic.
Into the blender everything went. I seasoned with salt, black pepper, cilantro, cumin, a pinch of sugar and a splash of chicken broth.

Oh I am too. I'll judge a Mexican restaurant not by the entree but by how good their salsa is.
