Jibba - to each his own, but I've tried most of the others on that list and BK is the nuts. I have fed a ton of it to friends and acquaintances and have yet to get the first complaints

I actually think Kartchners tastes the best out of the three places I listed. They do a coarse grind (chop?) and don't trim as much, so the texture is a minus for me. You'll get big chunks of meat (AWESOME), but also big chunks of fat (...AND I'M DONE).

But hell, yeah, it's worth it. They make a delicious product, my personal hangups about texture aside. I usually keep both Kartchner's and Billy's in the freezer. If I'm eating out of casing, I'll go with Billy's and if I'm doing something with the boudin out of casing (like my Parrain Specials this afternoon) where I can pick out the chunks I don't want to eat, I'll go with Kartchner's.

What is going on in these photographs in the OP? The link from Janise's looks like it's wrapped in wet paper towel and I've had T-Boy's more often than I can count, in Eunice and Mamou and never seen it look so dark.. This whole thread is bizarre.
