Glad it was better with the sandwiches, the pictures of the finished product look amazing. I would be so disappointed if I put in the effort you did and then weren’t happy with the results.

Anytime you try something new it takes a couple of attempts to tweak the recipe to fit your taste. I'm betting the next time it will be much closer to where you would like it and the 3rd time will be the charm.

I defrosted my pork belly that I'm going to do this weekend. Whichever day is more in the 40s.

My plan is to cube it ahead of time, coat in my rub, and let sit overnight, then smoke the shite out of it for 3-4 hours for max smoke, fat render and crispiness. May brush or spritz with apple juice part way through, but we'll see. I'm half winging it.
