How are you resting? My oven goes all the way down to 135 if I need to do that.

I take mine off the smoker when it reaches probe tender. Then I let it rest at room temp for about a 1/2 hour to bring it down to about 160 ish. Then wrap in foil with some beef tallow inside. Then into a 150 degree oven until ready to serve. Can hold for a very long time if you want. Like at least 24 hours or more I’m sure.

Just like Redhawk said. My oven goes down to 100 if I need it to. I usually put a water pan on the rack below it too, just to humidify the space.
