Low carb cookbook/recipes

Can anyone recommend a low carb cook book or recipes? We’ve been doing low carb (not necessarily keto) on and off for a while now and we are ready to make the commitment to doing it long term because of some health issues that I have that seem to do better when I cut out carbs. However, we need to expand what we can cook. We’re kinda getting tired of making the same things over and over again. Thanks!

With the number of low carb recipe websites and blogs out there I don't know that it's really necessary to use a cook book

I get my ideas from Instagram, and some of those I'm following also have blogs or websites with their recipes on them.

Here's a compilation page of recipe links I made from the years I was doing Keto. You can browse the different websites as they mostly post low carb stuff.

Low carb meatloaf was one of my favorites.

Sub crushed up pork rinds for the breadcrumbs.

Low carb bbq instead of ketchup.

Serve with mashed cheesy cauliflower.

We do the following on repeat:

Cream cheese and jalapeño stuffed, bacon wrapped chicken thighs (sometimes pork chops)
Stuffed bell peppers with cauliflower rice
Steak and asparagus
Tacos (with homemade low carb taco seasoning)
Pot roast with mashed cauliflower

I could eat pork chops and pork tenderloin with vegetables all day every day, but my husband doesn’t like pork that much. We could both eat steak all the time, but getting good ribeyes makes our grocery bill skyrocket obviously, so we try to limit it to once a week.
