I've always cooked cornbread dressing with chicken and sage over a celery/green pepper/onion base. How do y'all Louisiana folk make your dressing?

A lot of us do it the same way you do, but many others enjoy oyster dressing and rice based dressings.

I brown Savoie’s dressing mix with some trinity and garlic. Then, roll in cornbread.

My grandmother always did a dressing that was ground beef, ground pork, onions, chicken liver and gizzards (all chopped up) all cooked then add oyster liquor and oysters add a couple of eggs and pop into the oven.

I loved it and still make it but most people up here won't even try it

Oyster dressing is what my dad always made/makes. My mom makes just the classic cornbread dressing.
