Local chef that had a Sunday morning radio show?

In New Orleans.....many years ago?

He had one or two restaurants (not very well known) but he did a great job on the radio.

Chef Buster, he was the best. Brings back memories of me and my dad listening to him on our way to my Grandparents for Sunday Dinner.

Till this day I use his “ trinity”

Onions
Celery
Garlic
Tomatoe (yes tomatoe)

Small amount of bell pepper


Bell pepper is obviously not hot, but can have a strong and overwhelming flavor.

Tomatoe cooks up and you don’t “see it”. It smooths and brings everything together.

It healthy too!

That's a Spanish sofrito, common enough throughout the world wherever Spain had colonies. Portuguese, too...all over Latin America.

I have no idea why anyone would downvote you.

Anyway it’s worked for me.

Another thing I do is instead of chopping, I put my “trinity” in the blender when I’m doing pot meals like beans and gumbos etc.

I started doing this because my children didn’t like seeing veggies in their food!
